Coconut Cookies With a Hard Outside 2/3 cup margarine or shortening 1-1/2 cups sugar 2 eggs 3 Tbsp. orange juice or apple juice 2 Tbsp. grated orange rind 1 tsp. vanilla 1 tsp. lemon extract 2 cups flour 1 tsp. baking powder 1/2 tsp. salt (omit if using margarine) 2/3 cup shredded coconut 1 cup oatmeal (can add 1 cup flour instead) Cream margarine and sugar together. Add eggs and flavorings. Add baking powder and salt to flour and stir in. Add coconut and oatmeal. Freeze the dough in 1-1/2" rolls, for 24 hours. This is the secret to the commercial texture to these cookies. They are baked right from frozen so the outside is firm and inside is softer. Slice, and bake at 400 F in toaster oven, or 375 F in regular oven until brown. Can add nuts, dates, raisins, etc. to this recipe (may need a little more liquid). Enjoy! www.peg-gear-clock.com
